Angles


To select guide please see if sides of knife are inclined.
Actual sharpening angle will be a sum of knife side angle and guide angle.

Please look at knife's sides. Cross-section:

If sides are parallel to center line (Fig. 1), the guide angle will be the actual sharpening angle.

But most often knife's sides are inclined to center line at some degree (Fig. 2). In this case add side angle to guide angle to calculate the total actual sharpening angle per side.

You can use Angle Cube to measure knife side angle.
Or measure knife with caliper and use Angle Calculator.

Most kitchen and Chef knives have incline 2° per side. Very thin and Japanese knives have 1° per side. Folders, hunter and EDC knives are all different.



Example 1. Henckels Chef knife or other Western style.
Bevel: 15°
Micro-Bevel: 20°

On stones use 13° blue flat angle guide. The knife's side is angled 2° from center line. To calculate bevel angle add side angle to guide angle. Actual bevel angle will be: 13° + 2° = 15°.

On sharpening steel use 18° orange cone. With 2° incline of knife's side the actual honing angle of micro bevel will be 18° + 2° = 20°.

Sharpen on stones to establish main bevel first. Then hone on sharpening rod for micro bevel. You will have very sharp knife. It is easy to maintain sharpness. You can hone it 100 times before need to sharpen again.

Example 2. Japanese knife or other Asian style.
Bevel: 11°
Micro-Bevel: 15°

On stones use 10° blue flat angle guide. With 1° incline of knife's side the actual sharpening main bevel angle will be 10° + 1° = 11°.

On sharpening steel use 14° orange cone. With 1° incline of knife's side the actual honing angle of micro bevel will be 14° + 1° = 15°.

Sharpen on stones to establish main bevel first. Then hone on sharpening rod for micro bevel. You will have very sharp knife. It is easy to maintain sharpness. You can hone it 100 times before need to sharpen again.

Example 3. Zyliss knife.
Bevel: 16°
Micro-Bevel: 20°

On stones use 16° blue flat angle guide. Knife's sides are parallel, so the actual sharpening main bevel angle will be 16°.

On sharpening steel use 20° orange cone. Actual honing angle of micro bevel will be 20°.

Example 4. Buck 110 knife.
Bevel: 15°
Micro-Bevel: 19°

On stones use 10° blue flat angle guide. With 5° incline of knife's side the actual sharpening main bevel angle will be 10° + 5° = 15°.

On sharpening steel use 14° orange cone. With 5° incline of knife's side the actual honing angle of micro bevel will be 14° + 5° = 19°.
